Banana French toast

Created by vegan chef Gaz Oakley, this banana French toast recipe is completely plant-based, and makes a very tasty breakfast.
- Whisk together the soy milk, maple syrup, flour, cinnamon and vanilla, then dip each slice of bread in until thoroughly coated. Fry in a dash of coconut oil in a hot pan, cooking on each side until golden. Set aside and keep warm.
- Meanwhile, fry the bananas in oil in a separate pan for 3 minutes on each side, sprinkling over the sugar as they cook, until caramelised.
- Divide the toast and bananas between plates, garnishing with the rest of the toppings.
