Jade, a member of our My Lidl community, shared this ‘very tasty and easy to make’ leek and potato soup recipe with us. A dash of cream adds richness, while the addition of parsnip brings a hint of sweetness.
- Melt the butter in large frying pan, add the vegetables and fry gently till soft.
- Add the stock, salt (if using) and pepper to taste. Bring to the boil, then cover and simmer for 1 hour or until all the vegetables are tender, topping up the liquid with water if required.
- Cool slightly, then place in a blender and mix till smooth. Return to the pan, stir in the cream and heat through, but do not boil.
- To serve, swirl through a little extra cream and garnish with chives.
