Jade, a member of our My Lidl community, shared this ‘very tasty and easy to make’ leek and potato soup recipe with us. A dash of cream adds richness, while the addition of parsnip brings a hint of sweetness.

  1. Melt the butter in large frying pan, add the vegetables and fry gently till soft.
  2. Add the stock, salt (if using) and pepper to taste. Bring to the boil, then cover and simmer for 1 hour or until all the vegetables are tender, topping up the liquid with water if required.
  3. Cool slightly, then place in a blender and mix till smooth. Return to the pan, stir in the cream and heat through, but do not boil.
  4. To serve, swirl through a little extra cream and garnish with chives.
