1. Peel 2 sweet potatoes and cut lengthways into 1cm slices. Arrange across a greased baking tray and roast in the oven at 180ºC/160º fan/gas mark 4 for 20 minutes.
2. Remove the sweet potato toasts from the oven and leave to cool, then spread with peanut butter* and top with sliced banana.
