Make midweek meals more exciting with these loaded nachos. Piled up with onions, spices and plenty of cheese, the chopped chillies add a hint of heat to this sharing sensation.
- Fry the beef mince and diced red onion together, then add the sachet of fajita spices. Stir the tomato purée through, and add the stock. Cook everything together for 10 minutes.
- Layer up tortilla chips, the beef and grated hot and spicy cheddar in an ovenproof dish, and grill until melted and golden.
- Top with chopped red chilli, chopped spring onion and sour cream to serve.
