1. Pour the lemon juice, sugar syrup and gin into a cocktail shaker and fill it up with ice. Side note: if you don’t have a cocktail shaker at home, you can pop the top of a medium-sized glass into the top of a larger glass and use this as your shaker instead. Just make sure it’s a tight fit otherwise you might end up with a lot of cocktail on the floor.
2. Shake the ingredients well, then pour into a flute. Top with a little Champagne, leave it for a second to get rid of the bubbles and then fill up the rest of the glass. Mix it gently with a spoon and then use your lemon rind as a garnish. Magnifique!
