    Make this on the Monday for a speedy breakfast that will last you through the week, leaving you more time to study...or sleep!

  1. Preheat the air fryer to 200°C. Lay your bacon in a single layer in the bottom of the air fryer basket (if you have a crisper basket attachment use this for crispier bacon) and cook the bacon for 6 minutes. Remove from the oven and let cool slightly before roughly chopping.

  2. Grease a 20cm round baking dish or a dish of a similar size that will fit into your air fryer. Lower the heat to 180C.

  3. Crumble the hashbrowns into a large bowl. Finely slice the spring onions for zing and finely dice the pepper. Add these to the bowl along with most of the cheddar and all the bacon for crunch. Stir the soured cream for creaminess into the hash brown mixture until thoroughly combined, seasoning to taste. Press the mixture into the dish until even and sprinkle over the remaining cheese. Transfer to the air fryer and air fry for 20 minutes or until golden on top and set.
