Preparation
Whisk together 60g plain flour, the egg and milk in a jug or bowl, seasoning well. Leave to rest.
Drizzle 1 tsp of oil into a small 20cm rectangular baking dish and transfer to your air fryer, fitted with a crisper tray if you have one. Preheat the air fryer to 200°C. Once heated, carefully add the sausages, rolling in the oil. Air fry for 5 minutes. Open the air fryer and carefully pour the batter around the sausages. Close the air fryer and air fry for 15 minutes. Do not open the air fryer during this time.
Meanwhile, finely slice the onion. Heat the remaining oil in a small pan and cook the onion over a medium heat for 6-8 minutes until softened and starting to turn golden. Sprinkle over the flour and continue to cook for another 30 seconds until the flour has disappeared, then pour in the stock and stir together. Let it bubble for a minute before stirring in the butter for richness. Simmer for another minute until lightly thickened then remove from the heat and season with black pepper.
Serve the toad in the hole with the gravy and vegetables of choice.
