Method
This Asian salad dressing recipe would be delicious drizzled over cold noodles and shredded leaves, or could even be used as a marinade for meat.
- Deseed the chilli and slice finely. Add to a jar with the garlic, lime juice and rapeseed oil.
- Replace the lid of the jar and shake until the dressing emulsifies. Taste - you may want to add more lime juice - and leave to sit, sealed, for 20 minutes.
- Before serving, remove the garlic and stir through the coriander and peanuts.
