    • 1   avocado
    • 1   garlic finely chopped
    • 0,5   lemon zest and juice
    • 70   ml extra-virgin olive oil
    • 1   tbsp sunflower seeds
    • 1   pinch salt
    • 1   pinch black pepper


    This vegan avocado dressing will add a welcome creamy quality to salads or sandwiches. For extra kick, swap the lemon juice for lime and add fresh coriander and a pinch of dried chilli.

  1. Deseed and chop the avocado and add to a blender along with the garlic, oil and lemon zest and juice.

  2. Blitz until smooth and creamy, loosening with a little water if you'd prefer a looser consistency.

  3. Meanwhile, toast the sunflower seeds lightly in a hot, dry pan until golden and aromatic.

  4. Season generously to taste, pour into a jug and top with the toasted seeds.
