This vegan avocado dressing will add a welcome creamy quality to salads or sandwiches. For extra kick, swap the lemon juice for lime and add fresh coriander and a pinch of dried chilli.
- Deseed and chop the avocado and add to a blender along with the garlic, oil and lemon zest and juice.
- Blitz until smooth and creamy, loosening with a little water if you’d prefer a looser consistency.
- Meanwhile, toast the sunflower seeds lightly in a hot, dry pan until golden and aromatic.
- Season generously to taste, pour into a jug and top with the toasted seeds.
