This vegan avocado dressing will add a welcome creamy quality to salads or sandwiches. For extra kick, swap the lemon juice for lime and add fresh coriander and a pinch of dried chilli.
Avocado dressing

- 1 avocado
- 1 garlic finely chopped
- 0,5 lemon zest and juice
- 70 ml extra-virgin olive oil
- 1 tbsp sunflower seeds
- 1 pinch salt
- 1 pinch black pepper
Preparation
Deseed and chop the avocado and add to a blender along with the garlic, oil and lemon zest and juice.
Blitz until smooth and creamy, loosening with a little water if you'd prefer a looser consistency.
Meanwhile, toast the sunflower seeds lightly in a hot, dry pan until golden and aromatic.
Season generously to taste, pour into a jug and top with the toasted seeds.
