    Meeting over a cocktail takes on a whole new meaning with this easy pasta dish, inspired by the popular tomato-and-vodka cocktail.

  1. Finely dice the onion and celery. Heat the oil in a large saucepan and fry the onion, celery and thyme for 6-8 minutes, or until translucent and soft. Add the vodka for kick and let it bubble, then add the tomato purée followed by the passata, honey and punchy Worcestershire sauce. Allow to simmer for 10-12 minutes, while you cook the pasta to packet instructions.

  2. Season the sauce well and, for heat, add a dash of chilli sauce to taste. Drain the pasta, reserving a mugful of the pasta water. Stir the linguine through the sauce adding a splash of the reserved pasta water to get a nice saucy consistency. Serve immediately with some freshly grated parmesan.
