Preparation
In a separate bowl, mix the wet ingredients.
Add the wet to dry, then fold in the bacon for some extra crispiness and 2/3 of the cheese for a bit more strength in flavour.
Fill to about 1/3 6 x large muffin tray (grease the compartments).
Add an egg into each one. Add the rest of the batter, then the rest of the cheese. Sprinkle some extra spring onions for a bit more crunch.
Bake at 180c for approx 20mins. Serve warm with butter and ketchup.
