Preparation

  1. Mix the dry ingredients, minus cheese together.

  2. In a separate bowl, mix the wet ingredients.

  3. Add the wet to dry, then fold in the bacon for some extra crispiness and 2/3 of the cheese for a bit more strength in flavour.

  4. Fill to about 1/3 6 x large muffin tray (grease the compartments).

  5. Add an egg into each one. Add the rest of the batter, then the rest of the cheese. Sprinkle some extra spring onions for a bit more crunch.

  6. Bake at 180c for approx 20mins. Serve warm with butter and ketchup.
