Preparation
- Carefully cut the broccoli for bite through the stalk into 4 steaks, keeping any florets that fall off as big as possible.
- Blanch the broccoli in boiling water for 4 minutes then drain and leave to steam dry for a few minutes.
- Next, mix the chilli for kick, lemon juice for a nice bit of zing, garlic, olive oil and some seasoning together in a large bowl then add the broccoli and toss to coat well.
- Grill the broccoli on a hot BBQ or griddle for 2 minutes each side until it is nicely charred. Serve on a platter and scatter over the lemon zest, feta for tang and mint leaves.
