Cabbage and potato parcels

If your fridge is still feeling full after the big meal, this cabbage and potato parcels recipe is a tasty ways of making the most of your leftover veg.
- Boil 8 large Savoy cabbage leaves for 3 minutes, then rinse under cold water and pat dry.
- In a bowl, mix 300g mashed potato, 200g chopped leftover veg - such as carrots, parsnips or sprouts - seasoning and 75g grated cheese. Divide the potato mix between leaves, tie with kitchen string and scatter with extra cheese. Bake at 200ºC/180ºC fan/gas mark 6 for 15-20 mins.
