Fajita night is always a family favourite and this version is a wonderfully economical way to use up leftover meat from the weekly roast. Depending on how much chicken you have leftover, you might want to add a little rice to help fill out the wraps. The trick to getting rice portions right every time is 1 mug = 4 portions. Whilst the kids might insist on a mild option for the seasoning, you can always add a little more chilli heat with your favourite hot sauce or a few chilli flakes!

Preparation
Depending on how much chicken meat you have left, you may wish to cook up a little rice to add into the fajitas. If so, cook the rice according to packet instructions, rinse, cover and keep warm.
Add a little oil to a large nonstick frying pan or wok, and carefully fry the garlic (making sure it doesn't burn) before adding the onions and peppers. Stir-fry for a few minutes before adding the fajita seasoning, mixing well to combine the vegetables.
Next add the shredded or chopped leftover chicken, mix well and fry for a few minutes until heated through.
Carefully warm the tortilla wraps in a microwave or a dry pan, and serve with the salsa, fajita mix and rice if using, alongside any extra hot sauce or chilli flakes according to preference.
