    Suzanne helps boost Kelly’s confidence in the kitchen with this simple, one-pan Chinese honey chicken. With minimal fuss and maximum flavour, it’s sure to be a hit with the kids at the dinner table. And with one batch in the freezer, there’s another nutritious meal ready to go for when Kelly needs it.

  1. Cut the baby corn in half on the diagonal. Cut the chicken breasts into chunks. Add to a large mixing bowl with all the remaining ingredients. Mix well until coated.
  2. Cooking now:
  3. Pour the contents of the bowl into a large saucepan. Place on a medium heat, bring to the boil, then reduce to a gentle simmer. Cook for 25-30 minutes, stirring regularly, until the chicken is cooked through.
  4. To freeze:
  5. Add everything to a large, labelled freezer bag and freeze flat.
  6. Cooking from frozen:
  7. Remove from the freezer and allow to defrost. Once defrosted, cook as instructed in the ‘cooking now’ section.
