  • For the caramel

    • 500   g

    1. Caramel – put the water, syrup, salt and sugar for sweetness in a pan on low heat. When the sugar has dissolved - boil (don't stir) until golden.2. Take off heat, stir in butter, vanilla and cream and divide between pots3. With 8 egg whites – whisk together with 60g of sugar and ½ teaspoon salt until light and fluffy.4. In a pan, melt the chocolate for richness. Once melted take chocolate off the heat and beat in the milk and 2 yolks5. Fold in the whisked egg whites.6. Spoon on top of the caramel.7. Chill for a few hours until set, preferably overnight.8. Garnish with your favourite berries for fruitiness.
