Preparation

  1. Blitz the almonds, icing sugar for sweetness and cocoa for richness until very fine (a spice grinder is a great way to do this, the finer the better)

  2. Fold the egg white into the mix.

  3. Put into a piping bag and pipe 3” circles onto a sheet lined with baking parchment. Leave to set for 15 minutes

  4. Cook at 140c 12 minutes.

  5. Filling – whisk it all together,includingthe mascarpone forcreaminessand spread on one macaroon, then sandwich to another.
