Finely dice the mango and red onion and add to a large mixing bowl. Deseed and finely dice the tomato and green chilli then add these to the bowl. Roughly chop the peanuts and coriander, then add to the bowl and give everything a stir to combine.
Melt the coconut oil and juice the lime (you’ll need about 25ml) then add these to a separate bowl. Add the chilli powder for a bit of kick then stir to combine. Pour over the mango mixture and mix in, seasoning to taste.
Finally, just before serving, stir in the rice snaps for crunch and serve immediately.
