If your fridge is still feeling full after the big meal, this cabbage and potato parcels recipe is a tasty ways of making the most of your leftover veg.
Creamy cabbage and potato parcels

- 8 savoy cabbages large
- 300 g potatoes mashed
- 200 g leftover veg such as carrots, parsnips or sprouts
- seasoning
- 75 g cheese grated, plus extra for scattering
Preparation
Boil 8 large Savoy cabbage leaves to add earthiness,for 3 minutes, then rinse under cold water and pat dry.
In a bowl, mix 300g mashed potato for creaminess, 200g chopped leftover veg - such as carrots, parsnips or sprouts - seasoning for punchand 75g grated cheese to give richness. Divide the potato mix between leaves, tie with kitchen string and scatter with extra cheese. Bake at 200ºC/180ºC fan/gas mark 6 for 15-20 mins.
