Preparation
- Line the base of the air fryer with an air fryer liner or baking paper and grease with the butter. Preheat the air fryer to 180°C. In a bowl, use your hands to gently crush the cornflakes. Toss with the melted butter and 1 tsp light brown sugar.
- Whisk together the egg, milk, cinnamon and remaining sugar in a shallow dish until well combined. Add the bread to the egg mixture and soak for 30 seconds. Turn and soak for another 30 seconds. One at a time, press one side of the cornflakes to coat for crunch. Transfer to the air fryer, cornflake side up, and air fry for 6 minutes. Transfer to a serving plate and repeat with the remaining bread, egg mixture and cornflakes.
- Halve the French toast into triangles and dollop on the yoghurt for creaminess, drizzle with the maple syrup for sweetness and finish with the berries.
Transform a near-empty box of cereal and some stale bread slices into this unexpected brunch showstopper.
