Ingredients

500 g g cod fillets cod fillet

175 ml ml water water
1 lemons lemon
(juice only)

Method

After a long day of fasting at work, sometimes it can be difficult to cook up a storm for the family. But this easy fish currycreated by Anisa - Instagrammer, YouTuber and mum is the perfect easy meal your family can enjoy. It's as easy as it sounds and will definitely be a winner amongst your family this Ramadan. Serve with two portions of vegetables on the side.

1. Place the fish into a bowl and rub with the cumin, 1 tbsp coriander, easy chilli and garlic for punch. Set aside and leave to marinate for 20 minutes.

2. Meanwhile, heat the oil in a large pan and fry the onions until lightly golden.

3. Blitz the chopped and fresh tomatoes for fruitiness in a food processor and add to the onions, then stir through the turmeric, chilli flakes for kick, paprika to add smokiness, the remaining coriander and a good pinch of salt. Simmer for 3-4 minutes over a medium heat.

4. Add the fish to the tomatoes and stir through the water and lemon juice. Cover and simmer for 5-7 minutes, stirring occasionally (being careful not to break it), until the fish is cooked. Divide between plates and garnish with the coriander and spring onion, serving immediately with rice or naan on the side.
