Preparation
Finely chop the pecan nuts in a food processor, then add the dates, almonds, raisins and cocoa powder and blitz until clumpy and combined.
Wet your hands, then divide the mixture into 16 even pieces and roll into balls. Spread the coconut across a large plate and roll the balls across to evenly coat.
Once coated, place the balls in a lidded container and chill in the fridge.
