Method
Quick and easy to put together, this haggis croquette recipe is a great way of using up those lovely leftovers.
1. Mix together 150g leftover haggis, 250g neeps and 250g tatties in a bowl and add a large handful grated cheddar and season.
2. Shape the mixture into 12 croquettes. Dip each shape first in a bowl of flour, then in a bowl with 2 beaten eggs and finally coat in golden breadcrumbs.
3. Heat olive oil in a pan and fry until golden brown.
