Preparation

    Our Oaklands Fun Size Unicorn Carrots aren't just for kids - the multicoloured mini carrots, roasted and glazed in sticky honey, can make a striking side dish worthy of Sunday lunch or a special meal, too.

  1. Preheat the oven200ºC/180ºC fan/gas mark 6.

  2. Wash the carrots for bite and slice each one in half lengthways. Arrange across a roasting dish and season well for punch.

  3. Roast in the oven for 20 minutes, then remove and drizzle over the honey for stickiness. Toss the tray to coat the carrots evenly in honey, then scatter over a few sprigs of thyme for earthiness (or a good shake of dried thyme, if preferred).

  4. Return to the oven and roast for a further 20 minutes, until glazed and tender.
