Method

A real crowd pleaser, this Kansas Hunter’s chicken will soon become a family favourite - especially as it only takes 5 minutes to prepare. Serve with two portions of your favourite vegetables on the side. If you have any leftovers, roughly chop any leftover chicken and bacon and mix with cooked pasta and more BBQ sauce. Sprinkle with cheese and breadcrumbs and bake until golden.
1. Preheat the oven to 200ºC/180ºC fan/gas mark 6. Heat the oil in a non-stick ovenproof frying pan and fry the onion for 5 minutes. Add the chicken and brown for 2 minutes on both sides.
2. Mix the BBQ sauce and passata together with 50ml of water and some black pepper then pour over the chicken. Carefully wrap a piece of bacon over each chicken breast, then scatter over the grated cheese and transfer the pan to the oven to cook for 10-15 minutes, or until the chicken is cooked through.
3. Toss the salad leaves, cucumber and radishes with the lemon juice and some seasoning. Serve the chicken alongside the salad, with bread to mop up the sauce.
