1 tbsp tbsp sunflower oil sunflower oil
450 g g chicken breast fillet chicken breast fillet
(chopped into chunks)
2 garlic garlic
2 green peppers green pepper
(chopped into chunks)
1 tbsp tbsp soy sauce soy sauce
1 tins tin pineapples pineapple
(juice only (save the fruit for pudding!))
250 g g cherry tomatos cherry tomato
450 g g long grain rice long grain rice
(rinsed and drained)

Get creative with this chicken kebab recipe and add your family's favourite vegetables to the skewers. If you're using wooden skewers leave them to soak in cold water while the chicken is marinating.

  1. Place the chicken in a dish and cover with the garlic, soy sauce and juice. Cover with cling film and leave to marinate for at least 20 minutes
  2. Meanwhile, cook the rice according to packet instructions
  3. Preheat the oven to 200°C/180°C fan/gas mark 6
  4. Thread each skewer with 3 pieces of tomato, pepper and chicken. Place on a greased baking tray and bake for 12-15 minutes, until cooked through. Divide the rice between plates and serve with two kebabs
