Preparation
- Lay out the crackers and spread each with 1 tbsp of light cream cheese.
- Quarter the tomatoes, so the seeds are exposed. Horizontally slice 3 black olives. Then vertically slice the remaining 3 olives, each half is to then be sliced into 6 thin slices.
- Place the horizontally halved olive (the head) on bottom half of cracker, then place 2 matching tomatoes quarters above (body), fan out a bit.
- Place two (1cm) chives on the head (antennae). Place the longer, vertically sliced olives around the body (legs). Scatter herbs on plate to garnish.
Multigrain crackers are a great source of fibre, and this recipe is a fun way to get your kids eating them; there’ll be no need to bug them to eat all of these, they’re delicious!
