Preparation
- Fry the garlic, onions and sweet potato until soft. Stir in the mushrooms, peppers, tomatoes, herbs and seasoning and simmer until thickened
- Meanwhile, melt the butter and add the flour to make a paste. Whisk in the milk to form a smooth, thick sauce, then add the cheese
- Preheat the oven to 180°C
- Make the lasagne by layering up tomato sauce, lasagne sheets and white sauce until everything has been used up. Top with extra cheese and bake for 30-40 minutes
