Preparation
Fry the garlic, onions and sweet potato until soft. Stir in the mushrooms, peppers, tomatoes, herbs and seasoning and simmer until thickened
Meanwhile, melt the butter and add the flour to make a paste. Whisk in the milk to form a smooth, thick sauce, then add the cheese
Preheat the oven to 180°C
Make the lasagne by layering up tomato sauce, lasagne sheets and white sauce until everything has been used up. Top with extra cheese and bake for 30-40 minutes
