Preparation

    Grab a selection of colourful Mediterranean deli and antipasti ingredients, then load them up on chunky, crispy golden chips for a sharing platter. Any leftover ingredients make for great pizza toppings.

  1. Preheat the oven to 220°C, fan 200°C, gas 7, with a large tray in the oven to get hot. Tip the frozen chips on to the hot tray and cook for 15-20 minutes (or according to pack instructions) until crisp and golden.

  2. Meanwhile, roughly chop the fresh and sun-kissed tomatoes, finely chop the spring onions and shred the basil, then mix together with some seasoning to make a fresh salsa.

  3. When the chips are ready, pile them up on a serving platter then spoon the salsa over the top. Scatter on the chargrilled peppers and olives and crumble on the feta for tang, then spoon the creamy tzatziki on top. Serve immediately.
