Method
A bright, bold dip that’s full of punchy flavours, with fresh mint, salty feta and zesty lemon all perfectly combined. Load onto tortilla chips or spread over crisp breads for a tasty light lunch.
- Cook the frozen peas in boiling salted water for 3 minutes until tender. Drain, then rinse in cold water until cold.
- Pat the peas dry with kitchen towel, then blitz in a blender along with the lemon juice, feta, oil and half the mint leaves - the texture should be almost smooth, but still a little chunky.
- Once the dip has reached the right consistency, pour into a serving dish and season generously to taste. Garnish with the remaining mint leaves and serve.
