Preparation

    Get your green fix with this vibrant pasta that’s perfect for all the family. Finish with spooky olive eyes for a frightfully delicious dinner.

  1. Cook the pasta according to pack instructions. Drain, reserving a mug of the cooking water, and return to the pan.

  2. While the pasta cooks, finely chop the onion and crush the garlic. Heat the oil over a medium heat in a non-stick frying pan and cook the onion for 5-6 minutes, until soft but not coloured. Stir in the garlic and cook for another minute. Add the spinach and peas, along with a splash of pasta water, and cover with a lid. Turn down the heat and cook for 5 minutes, until the spinach has wilted.

  3. Transfer the spinach mix to a blender, along with the parsley (leaves and stalks), and whizz until smooth. Grate the lighter mature cheese. Add this and the soft cheese to the green sauce, along with a splash of pasta water, and whizz again until combined.

  4. Stir the sauce into the pasta. Transfer to a serving dish (about 22cm diameter), then make ‘eyes’ by rolling the mozzarella into balls and topping with pieces of black olives. Dot these all over the pasta to serve.
