When time is short and you’re after something quick and tasty, this mussel linguine is a great way to mix things up whilst being oh-so easy to prepare.
1. Cook 200g linguine for 1 minute less than packet instructions.
2. Meanwhile, soften chopped red pepper and diced onion in olive oil, then add 1 tin tomatoes and 1 pack mussels in white wine sauce. Cover with a lid and simmer (not boil) for 5 minutes.
3. Drain the linguine and add to the pan with the sauce, tossing to coat. Garnish with chopped parsley.
