    1. Mix the olive oil, halloumi, nectarines and some black pepper in a bowl. The halloumi and nectarines with add some chew and fruitiness to the dish.

    2. Heat a griddle until it is smoking then cook the halloumi for 2 minutes, turning once. Next cook the nectarine slices for 1-2 minutes, turning once. Transfer to a plate.

    3. Add the crunchy cucumber, red onion, basil and lemon zest and juice for some added zing. Seasoning the mixture with oil and mix to combine.

    4. Divide the salad leaves between 4 plates then top with the cucumber and red onion salad, followed by the halloumi and nectarines then drizzle over any remaining dressing from the bowl.
