Preparation

    1 First, prepare the ice. For fruitiness, divide the raspberries and the mint leaves between the recesses of a large ice-cube tray. Use a mix of both for some cubes and keep to a singular flavour for others. Pour over enough water to fill with a little room to expand and freeze for 4 hours or overnight.

    2 Take 2 highball glasses. Put a large handful of the ice in each and add 2 wedges of lime to each for zing. Divide the gin between the glasses and pour in tonic water for kick, topping each with 25ml of soda water. To garnish, add a sprig of mint for colour.
