Preparation

    Few dishes feel more autumnal than stewed apple, and this fruity brunch recipe is a great way of serving it. To change things up, swap the honey for peanut butter or add a dollop of natural yoghurt.

  1. Peel, core and thickly slice the apples, then place in a saucepan with the sugar, and fresh ginger and mix well.
  2. Add the butter and water, then heat for 10 - 12 minutes, stirring occasionally, until the apples are soft and the liquid has thickened a little.
  3. Place a slice of toasted fruit loaf on each plate and spread thickly with peanut butter. Divide the apples between plates and serve immediately.
