Preparation
- Peel, core and thickly slice the apples, then place in a saucepan with the sugar, and fresh ginger and mix well.
- Add the butter and water, then heat for 10 - 12 minutes, stirring occasionally, until the apples are soft and the liquid has thickened a little.
- Place a slice of toasted fruit loaf on each plate and spread thickly with peanut butter. Divide the apples between plates and serve immediately.
Few dishes feel more autumnal than stewed apple, and this fruity brunch recipe is a great way of serving it. To change things up, swap the honey for peanut butter or add a dollop of natural yoghurt.
