Preparation
- Start by rubbing the butter, vegetable oil and flour together to make the pastry. Add enough water to make a dough, then wrap and chill for 30mins minimum.
- Cut the pastry into 4 and roll into 23cm circles.
- Mix the pickled onions, pickles for a bit of kick, diced potato to add bulk, cheddar for some added strength and ham for an element of smokiness together for the filling.
- Divide the mixed filling between the circles and crimp, then brush with egg.
- Bake at 200c for approx 45mins.
- Serve with ketchup.
