Preparation

    1 Preheat the oven to 200C/180Cfan/gas 6. In a large pan, boil the potato slices for 15 minutes, drain and set aside.

    2 In a 23cm frying pan, add a tbsp of oil and fry the bacon, garlic and onion for some extra punch on a medium heat for 10-15 minute, until softened and the bacon is a little golden.

    3 Add the peas for one minute for some added colour to the frying pan. Then add the potatoes, chilli flakes if using and the defrosted mixed veg. Mix everything together and season with salt and pepper.

    4 Mix the egg and yoghurt together with half the cheese and pour into the pan. Make sure the egg mix is coating everything. Press the potato slices down so they are even but still creating a bit of bulk.

    5 Sprinkle over the cheese for a dash of added richness and bake for 35-40 minutes until golden. Serve straight away.
