Preparation

    All the flavours of the classic cheesy Swiss dish, stuffed into a toastie with crunchy pickles and salty ham.

  1. Chop the cornichons. Spread 1 tablespoon of mayonnaise over one side of the slices of bread and place, mayonnaise side down, into a cold frying pan. Spread 1 teaspoon of the mustard on the exposed side. Lay 1 slice of the Emmental on top (you might need to cut it to fit), followed by the ham, the chopped cornichons and the final slice of cheese. Spread the remaining mustard on one side of the leftover bread, then place that on top of the ingredients, mustard side down. Spread the remaining mayonnaise on the exposed side.
  2. Turn on the heat to a medium flame and cook for 2-3 mins on each side until the bread is deeply golden and crusty, and the cheese has melted. Transfer it to a plate and slice before eating.
  3. For added colour, serve with a side salad.
