Preparation

This is a refreshing twist on a classic mojito with the addition of rosé wine to add a fruity kick to the fresh lime and minty base. Adding a handful of mixed berries not only makes this cocktail a real eye-catcher but it also enhances the flavour of the gin.

  1. Very gently bruise the mint leaves in a high ball glass using a roll pin or muddler, add the gin and stir well.
  2. Make the sugar syrup by heating the sugar and water together until dissolved. Measure out 15ml and add to the glass with the crushed ice, lime and rosé.
  3. Stir to mix the ingredients and top up wth extra ice and soda. Garnish with berries and more fresh mint to serve.
