Preparation
- Very gently bruise the mint leaves in a high ball glass using a roll pin or muddler, add the gin and stir well.
- Make the sugar syrup by heating the sugar and water together until dissolved. Measure out 15ml and add to the glass with the crushed ice, lime and rosé.
- Stir to mix the ingredients and top up wth extra ice and soda. Garnish with berries and more fresh mint to serve.
This is a refreshing twist on a classic mojito with the addition of rosé wine to add a fruity kick to the fresh lime and minty base. Adding a handful of mixed berries not only makes this cocktail a real eye-catcher but it also enhances the flavour of the gin.
