This warming hot chocolate is made extra indulgent with a topping of marshmallows and salted caramel sauce. Make it boozy if you like, too!
Salted caramel hot chocolate

Preparation
Start with the caramel sauce. Put the sugar in a small frying pan and heat over a low heat until it starts to melt around the edges – swirl the pan every now and again to encourage all the sugar to melt, but don’t stir. When the sugar has melted and is a deep golden brown colour, add the cream, butter and sea salt, and stir well to combine, taking care as it will bubble up. Keep warm.
To make the hot chocolate, put the milk, cocoa powder, sugar and chocolate in a saucepan and heat over a gentle heat, whisking until the sugar and chocolate have melted. When the hot chocolate is just steaming, add the Irish liqueur, if using.
Divide the hot chocolate between two latte glasses or mugs and top with the marshmallows. Drizzle over some of the caramel sauce and serve.
