Preparation

    A dead good veggie platter with cucumber, peppers, broccoli and carrots. Dip into a spooky guacamole dip for an extra hit of flavour.

  1. Peel and carefully remove the avocado stones from the inner flesh before smashing with a fork.

  2. Mix all the guacamole ingredients into the smashed avocado.

  3. For the spooky veggies:

  4. Slice the cucumber into 1 cm pieces. Slice 5 mm off the left and right side of the cucumber bottom. Use a metal straw to poke eye holes and use a chopstick to poke out the nose and mouth.

  5. Set aside one red pepper for the carrot's fingernails. Half and deseed your remaining peppers. Carefully carve out the eyes, nose and mouth with a paring knife.

  6. Peel the carrots (use long and thin ones) and cut 3 thin grooves into the middle of each using a paring knife – these will be your fingers! Carve the fingernails from the red pepper you have set aside and place on the thinnest end of your carrots.

  7. Now for your spider, which will sit on top of your guacamole. Cut one black olive in half lengthwise and use as the body, slice the other half up, together with your second olive, into 8 thin legs.

  8. Spoon the guacamole into a shallow bowl and place the yoghurt into a squeeze bottle or piping bag and draw a web. Place the olive spider in the web.

  9. Arrange your veggies, including the tenderstem broccoli, around your spooky guacamole bowl and enjoy!

  10. The 40 minute prep time includes the carving of the veg and the guacamole prep. 2 of your 5 a day based on 8 servings. Broccoli is a source of fibre and high in folate (Vitamin B9), which helps to reduce tiredness and fatigue . Peppers are high in Vitamin A, which supports normal vision.
