Method

This healthy salmon sandwich recipe is the perfect meal to have before or after your little ones play a game of football. With the right balance of fat, protein and carbohydrate it should fuel your footballer to play at their very best.

  1. Begin by preparing the avocado.Cut into the middle of the avocado and slide the knife all the way round, then pull apart. Wrap the half with the stone in clingfilm and reserve for another recipe (the stone will keep it from browning), then slide out the flesh from the remaining half and mash.
  2. Divide the mashed avocado between seeded rolls and top with the spinach and cucumber slices.
  3. Scoop the salmon into a bowl, season a little and mash until chunky. Spoon this on top of the vegetables and garnish with finely sliced red onion.
