Preparation
1 In a large deep-frying pan, heat a tbsp of oil and add the onion and carrot for an array of colour. Fry for 5 minutes, then add the diced bacon which will provide the distinct smokiness.
2 Turn the heat to high and fry for 3-4 minutes until the bacon starts to brown slightly, stirring regularly.
3 Now add the garlic and rice and stir fry for 1 minute until the rice starts to run translucent.
4 Add the fresh boiled water, stir and put a lid on the rice. Simmer on a low to medium heat for 10-15 minutes. Stir and season to taste.
5 Stir in the peas and broccoli to bulk out the dish a bit more and simmer for a further 10 minutes. When the rice is tender, stir in the lemon juice for some added zing and season to taste. Serve with the zest and black pepper.
