Smoky BBQ sauce
This homemade BBQ sauce recipe makes a delicious dip or marinade for a barbecue. To add extra intense flavour cook the onion over the coals of the barbecue until dark and soft before adding to the pan.
- Gently fry the onion in the oil until just beginning to colour, then add the garlic, ginger and paprika and continue to cook for a further 3 minutes.
- Reduce the heat, and all the remaining ingredients and stir well. Bring to a simmer, then cook for around 20 minutes until thickened.
- Remove the sauce from the heat and allow to cool slightly, then transfer to a blender and blitz until smooth. Store in an airtight container in the fridge for up to two weeks.
