Ingredients

For the dressing

2 garlic garlic
(crushed)
1 Red chillies Red chilli
(finely chopped )
2 tbsp tbsp olive oil olive oil
2 tbsp tbsp lime juice lime juice

To serve

1 cucumbers cucumber
2 tbsp tbsp mint mint
(chopped)
2 tbsp tbsp coriander coriander
(chopped)

Method

This clever side dish was created exclusively for Lidl by barbecue expert Helen Graves: ‘Grilled cucumber adds an extra dimension of flavour to this salsa.’

  1. Chop the cucumber into 8 pieces and grill over direct heat for 10 minutes until well charred.
  2. Combine the dressing ingredients in a jam jar and shake until emulsified.
  3. Dice the cucumber, coat with the dressing and scatter over the herbs.
