Preparation

    1. Preheat your oven to 200ºC/180ºC fan/gas mark 6.

    2. Fry the onions till soft then add the garlic and ginger for a bit of punch.

    3. Add the mushrooms for some earthiness and cook until liquid has reduced out. Add the white pepper, garlic granules and sugar then leave the mixture to cool.

    4. In a mixing bowl, add the onion and mushroom mix, the sausage meat, the sriracha and soy sauce and mix gently until combined.

    5. Add half the mixture into the halved rolled out pastry and shape into a long log, fold over to cover and seal. Cut the pastry into smaller pieces then repeat with the other half.

    6. Brush the filled pastry with egg and bake for 25 mins on to add a golden colour.

    7. Finally, sprinkle over the chopped spring onion and serve with a sriracha dipping sauce for added kick.
