Ingredients

1 butternut squash butternut squash
large, washed in olive oil

For the glazed onion

2 red onions red onion
finely sliced
3 tbsp tbsp balsamic vinegar balsamic vinegar

For the rice

150 g g basmati rice basmati rice
cooked
150 g g cooked chestnuts cooked chestnuts
roughly chopped
75 g g dried apricots dried apricots
chopped
150 g g mixed nuts mixed nuts

1 pinches pinch paprika paprika
0.5 lemons lemon
juice only
1 pinches pinch salt salt

For the sautéed mushrooms

160 g g mushrooms mushroom
1 tsp tsp garlic powder garlic powder
5 tbsp tbsp cranberry sauce cranberry sauce
4 peppers pepper
roasted, skin removed
6 sundried tomatoes sundried tomato
re-hydrated
2 handfuls handful baby spinach baby spinach

Method

Preparation time: 1:00 h

Created by chef Gaz Oakley, this stuffed roast squash recipe adds real wow factor to a plant-based roast dinner, combining Christmas flavours together in a parcel of goodness.

1. Preheat your oven to 180ºC/160º fan/gas mark 4. Split the squash in half lengthways, place cut-side up onto a baking tray and bake for 45 minutes, or until just soft.

2. Meanwhile, make the glazed onions. Heat 3 tablespoons of water in a non-stick saucepan, add the sliced onion and sweat for 5 minutes. Add the vinegar and sugar, then cook for a further 10 minutes over a low heat, stirring occasionally, until caramelized. Set aside.

3. Mix the Christmas rice ingredients in a mixing bowl until fully combined, then set aside. Sauté your mushrooms. Heat 2 tablespoons of water in a non-stick frying pan over a medium heat. Add the mushrooms, garlic powder and seasoning. Sauté for 5 minutes.

4. When the squash is cooked and cooled slightly, scoop out the seeds, then scoop out a 2cm deep channel of flesh and mix that into the Christmas rice mixture. Spoon the cranberry sauce into one of the squash halves, followed by the rice. Top with the peppers, onions, mushrooms, sun-dried tomatoes and spinach. Place the other squash half on top, tie together in three places and roast for a further 15 minutes. Carve and serve straightaway.
