Method

Fresh, fragrant and ready in no time, this tomato relish and mint raita recipe will be an ideal match for sharing dinners and curries.

1. For the relish, chop 250g vine tomatoes and mix with ½ finely chopped red onion, 1 deseeded and chopped green chilli, lime juice, 30g chopped coriander and a pinch each of cumin and caster sugar. Season and set aside.
2. For the raita, coarsely grate ¼ cucumber and strain out any liquid through a sieve.
3. Mix with 250g Greek-style yoghurt, 10g shredded mint leaves, 2 tsp lemon juice and a pinch of cumin powder.
