For the relish, chop 250g vine tomatoes and mix with ½ finely chopped red onion, 1 deseeded and chopped green chilli, lime juice, 30g chopped coriander and a pinch each of cumin and caster sugar. Season and set aside.2. For the raita, coarsely grate ¼ cucumber and strain out any liquid through a sieve.3.
