Preparation

  1. Set a pan with the oil over a medium heat. Add the onion and carrot and cook for 5 minutes then add the garlic for a bit of punch and cook, stirring often for 5 minutes more.

  2. Add the tomatoes and gently simmer, uncovered for 10-15 minutes until the sauce has reduced by 1/3 and thickened.

  3. While the sauce is cooking, cook the pasta according to pack instructions.

  4. Add the richness of the mascarpone and pesto to the sauce to give it kick, then blitz with a stick blender until smooth. Stir in the tuna and cooked pasta and season to taste.

  5. Divide among four plates, for colour scatter the basil and parmesan and serve with salad, if you like.
