Super quick to put together, try this turkey lettuce cup recipe - an ideal protein rich snack when you’re keen to stay fuller for longer.
1. Heat 2 tbsp of oil in a pan. Add 6 sliced mushrooms and allow to brown. Add 450g of turkey mince and 1 finely diced carrot for a few minutes.
2. Add 1 diced chilli, 1 garlic clove grated, 1 thumb-sized piece of ginger grated and cook for 5 minutes. Stir in 3 tbsp soy sauce and 2 tbsp honey. Heat until the turkey is cooked through.
3. Separate the leaves from 2 gem lettuces and carefully spoon in the cooked turkey mince.
